Beat the eggs in another bowl.
Line a baking sheet with parchment paper and brush it lightly with vegetable oil.
Dip the cauliflower florets into the egg mixture, then into the cheese and breadcrumb mixture.
Arrange the florets on a baking sheet lined with parchment paper and bake in an oven preheated to 180°C for about 20 minutes.
