Cheesy Sausage Breakfast Muffins

1. Prepare Your Muffin Tin

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well with nonstick spray.

2. Cook the Sausage

In a skillet over medium heat, cook the sausage until browned and no longer pink. Break it up into small crumbles as it cooks. Drain excess grease and set aside.

3. Whisk the Egg Mixture

In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until smooth.

4. Add Mix-Ins

Stir in the cooked sausage, onions, peppers, and about ¾ cup of the shredded cheese. Save the remaining cheese for topping.

5. Fill the Muffin Cups

Divide the mixture evenly among the muffin cups, filling each about ¾ of the way full.

6. Top with Cheese

Sprinkle the remaining shredded cheese evenly over the tops of the muffins.

7. Bake

Bake in the preheated oven for 20–25 minutes, or until the muffins are puffed, golden, and set in the middle. A toothpick inserted should come out clean.

8. Cool Slightly and Serve

Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm or store for later.
