Directions

Preheat your oven to 400°F (200°C) and line a baking dish with aluminum foil.
Slice the tofu into four equal pieces and place them in a shallow dish.
In a small bowl, mix together the soy sauce, olive oil, and lemon juice. Pour the marinade over the tofu pieces, ensuring they are well-coated. Let them marinate for at least 15 minutes.
In another bowl, combine the breadcrumbs, Parmesan  cheese, cilantro, chives, garlic powder, black pepper, and salt.
Remove the tofu from the marinade and press each piece into the breadcrumb mixture, ensuring an even coating on all sides.
Place the coated tofu pieces in the prepared baking dish. If desired, drizzle a little more olive oil over the top for extra crispiness.
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the tofu is heated through.

Serve immediately, garnishing with additional herbs if desired.

Variations & Tips

For a gluten-free version, substitute the breadcrumbs with crushed gluten-free crackers or cornmeal. You can also experiment with different herbs, such as basil or parsley, for a unique flavor profile. Adding a sprinkle of red pepper flakes can provide a spicy kick for those who enjoy a bit of heat. For a vegan option, replace the Parmesan cheese with nutritional yeast for a cheesy flavor without dairy.
