Ingredients:
- 2 cups of cooked rice (leftover rice works great!)
- 1 can of cream of mushroom soup (or cream of chicken for a twist)
- 1 cup of shredded cheese (cheddar is best, but feel free to mix it up)
- 1/2 cup of sour cream
- 1 medium onion, diced
- 1 tablespoon butter
- Salt and pepper to taste
- Optional: 1 cup of cooked chicken or sausage (for extra protein)

Instructions:
- Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking.
- Sauté the onions: In a large skillet, melt the butter over medium heat. Add the diced onions and sauté for about 5 minutes until they’re soft and translucent.
- Combine ingredients: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sour cream, shredded cheese, and sautéed onions. Add a pinch of salt and pepper to taste. If you’re using cooked chicken or sausage, fold it into the mixture now.
- Bake: Pour the rice mixture into a greased casserole dish. Smooth the top with a spoon and cover with foil. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes to allow the top to get golden and bubbly.
