Ingredients:

    • 2 cups of cooked rice (leftover rice works great!)
    • 1 can of cream of mushroom soup (or cream of chicken for a twist)
    • 1 cup of shredded  cheese (cheddar is best, but feel free to mix it up)
    • 1/2 cup of sour cream
    • 1 medium onion, diced
    • 1 tablespoon butter
    • Salt and pepper to taste
    • Optional: 1 cup of cooked chicken or sausage (for extra protein)

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking.
  2. Sauté the onions: In a large skillet, melt the butter over medium heat. Add the diced onions and sauté for about 5 minutes until they’re soft and translucent.
  3. Combine ingredients: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sour cream, shredded cheese, and sautéed onions. Add a pinch of salt and pepper to taste. If you’re using cooked chicken or sausage, fold it into the mixture now.
  4. Bake: Pour the rice mixture into a greased casserole dish. Smooth the top with a spoon and cover with foil. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes to allow the top to get golden and bubbly.
  5. Serve: Let the dish sit for a few minutes before serving. The gooey, cheesy goodness will have your guests hooked from the first bite!
