Preheat Oven
Preheat your oven to 400°F (200°C).
Prepare Baking Dish
Spread the frozen hashbrowns evenly into the bottom of a 9×13-inch baking dish.
Mix Filling
In a large mixing bowl, combine:
Shredded cheddar cheese
Frozen peas and carrots
Sour cream
Drained corn
Cream of chicken soup
Shredded chicken
Milk
Season with salt and pepper to taste. Stir everything together until well mixed.
Assemble Casserole
Pour the chicken mixture over the layer of hashbrowns in the baking dish and spread evenly.
Add Topping
Sprinkle breadcrumbs evenly over the top of the casserole.
Bake
Bake uncovered for 1 hour, or until the casserole is hot, bubbly, and golden brown on top.
Cool & Serve
Allow to cool for 5–10 minutes before serving. Enjoy!
