My Mom’s Fudge

  1. Reduce the heat to maintain a steady, rolling boil.
  2. Let the mixture boil for exactly 5 minutes, stirring frequently (about every 20–30 seconds) to keep it from sticking or scorching on the bottom.
  3. After 5 minutes, remove the pan from the heat. Turn off the burner.

Step 5: Add Chocolate Chips:

  1. Immediately pour in 1¾ cups semi-sweet chocolate chips.
  2. Stir quickly and thoroughly with a rubber spatula or whisk. The residual heat will melt the chocolate.
  3. Continue stirring until the mixture is completely smooth and no visible chips remain.

Step 6: Add Marshmallow Fluff and Vanilla

  1. Spoon in 7 ounces of marshmallow fluff. It may be sticky—use a greased spoon or rubber spatula.
  2. Add 1 tablespoon vanilla extract to the pot.
  3. Stir until the fluff is fully incorporated and the mixture is completely smooth, glossy, and uniform in texture.

Step 7: Transfer to the Pan

  1. Pour the fudge mixture into your prepared 8×8 pan.
  2. Use a spatula to smooth the top so it’s level and evenly spread into the corners.
