Provençal Tomatoes: A Tasty Mediterranean Classic

🔪 Step 1: Preparing the tomatoes

  1. Preheat the oven to 180°C (preferably fan).
  2. Wash the tomatoes, cut them in half horizontally, then carefully remove the pulp and seeds with a spoon.
  3. Lightly salt the inside of the tomatoes and turn them out on a wire rack or paper towel for 10 minutes to drain.

🌿 Step 2: Preparation of the Provençal stuffing

  1. In a bowl, mix the breadcrumbs, chopped garlic, parsley, herbes de Provence, a pinch of salt and a turn of the pepper mill.
  2. Add 2 tablespoons of olive oil and mix well until you get a homogeneous shortbread texture.

🍅 Step 3: Assembly and baking

  1. Arrange the tomato halves, cut side up, in a lightly oiled baking dish.
  2. Fill each tomato generously with the stuffing.
  3. Drizzle the top of each tomato with the remaining 2 tablespoons of olive oil.
  4. Bake for 25 to 30 minutes, until the surface is golden brown and crispy.
