🔪 Step 1: Preparing the tomatoes
- Preheat the oven to 180°C (preferably fan).
- Wash the tomatoes, cut them in half horizontally, then carefully remove the pulp and seeds with a spoon.
- Lightly salt the inside of the tomatoes and turn them out on a wire rack or paper towel for 10 minutes to drain.
🌿 Step 2: Preparation of the Provençal stuffing
- In a bowl, mix the breadcrumbs, chopped garlic, parsley, herbes de Provence, a pinch of salt and a turn of the pepper mill.
- Add 2 tablespoons of olive oil and mix well until you get a homogeneous shortbread texture.
🍅 Step 3: Assembly and baking
- Arrange the tomato halves, cut side up, in a lightly oiled baking dish.
- Fill each tomato generously with the stuffing.
- Drizzle the top of each tomato with the remaining 2 tablespoons of olive oil.
- Bake for 25 to 30 minutes, until the surface is golden brown and crispy.
