Step 1: Prepare the Gizzards
- Rinse the chicken gizzards under cold water and remove any excess fat or membranes.
- Place them in a bowl and pour in the buttermilk. Let them soak for at least 2 hours (or overnight) in the refrigerator. This makes them super tender!
Step 2: Season and Bread the Gizzards
- In a separate bowl, mix flour, cornmeal, garlic powder, onion powder, paprika, salt, and black pepper.
- Remove gizzards from the buttermilk and let excess liquid drip off.
- Toss them in the flour mixture until evenly coated. Let them rest for 5 minutes so the breading sticks well.
Step 3: Fry the Gizzards
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Carefully add the gizzards in batches. Do not overcrowd!
- Fry for about 4–5 minutes, turning occasionally, until golden brown and crispy.
- Remove and drain on a paper towel-lined plate.
Step 4: Serve & Enjoy
